He was incredibly demanding and often pushed the production team to do some ridiculous stuff that never worked that they had to go back and redo their own way to get it to work. Most of the older team from ILM either left or burned bridges as they left because of it. Episode II and III had a much younger ILM staff working on it, and it wasn't because of the CGI it was because most of Lucas old crew were fed up with his shit. Less than a handful of ILM guys from Episode I were left.

For the CGI characters, they would do a "take" with the actors including the actor playing the CG character, usually in whatever clothes they woke up in. Then they did a take that was just a painted model of the CG character next to a mirror ball in various positions on set for reference, and then they did a take with the other actors on-camera without the CG character's actor, who is off-screen delivering their lines.
So basically, in an example 15 minutes in, Ewan McGregor is shown a statue of Dexter Jettster, gets to an an actual take where he hugs a real human, and then has to do a take where he hugs a vague amount of air where Dexter Jettster might be.
