Redemption is a huge theme in Star Wars. The original trilogy is ultimately about Darth Vader redeeming himself and going from evil guy to good guy. Kylo Ren will probably redeem himself (but who knows).
If anything, Star Wars is about choices more than fate and destiny. The Emperor tells Luke that it's his fate and destiny to join him and be bad. Luke resists this. He refuses his fate and ultimately defeats the Empire (until the New Order).
Not to be mean, but these are basic concepts of films that are pretty simple. I can only assume she's purposefully ignoring them for some reason, or that she's just not familiar enough with the films to comment on them (she is, admittedly, not a fan).

The point is that neither Star Wars nor Harry Potter are meant to be explorations of good and evil. The former is, if anything, a family soap opera while the latter is a children's story based on the importance of friendship. Trying to go any deeper than that is the definition of grasping at straws. Criticizing something for not being what it was never trying to be isn't even a valid criticism.
If she wants to explore good and evil she should pick up a philosophy book or some old speculative fiction from someone like Heinlein or Huxley. Oh wait those guys are racist, can't read those books!
