That was three years after Obi Wan had already started training him. Not three minutes after learning he was Force Sensitive. Luke's major jumps in skill pretty much only happened during the 3-4 year gaps between the movies.
It's kind of pointless to bash her character when we do not know anything about her.
What we can assume is that Rey is force sensitive (more than any other Jedi in recent times) and has a huge potential. Another thing we know is she is a survivor and comes from harsh origins. She's trained with a staff but is tough thanks to the harsh upbringing.
