Stannis is alive mate
Stannis Baratheon was one of the original members of the New Jedi Council formed by Luke Skywalker on Yavin 4 after the end of the Galactic Civil War.
Prior to this, Stannis was King of the planet Fostoria, but he abdicated his throne to his son in order to rebuild the Jedi order.
Stannis was not there during the Jedi massacre. It is unclear as to why this was.
After the destruction of the new Jedi order, Stannis goes off into hiding, never heard from again.

However, Stannis did in fact survive. He went to the farthest reaches of the galaxy and began secretly contemplating reforming the Jedi order.
However, Stannis believes that the only way the Jedi order can survive is if it adopts the rule of two, originally practiced by Baneite Sith.
