Also, Return of the Jedi had the best space battles... when all those rebel ships go into hyperspace... that was some good cinema.

The transports may have been used for boarding and taking over Star Destroyers, or converted into anti-fighter or even anti-cap roles. There's at least 3-4 (maybe 8 if those dual engines are smaller cruisers) Mon Cal Cruisers in that image.

It's fucking crazy. That shuttle hangar is unbelievably detailed. I've just noticed all the scaffolding and shit in the background; not to mention the imperial troops are all from different specialities, not just generic storm troopers.

Pretty sure this happens mostly in the EU, but canon alludes to parts of this:

After Endor, the Empire fractures and individual Moffs and Admirals take over territories themselves and become Warlords overnight, each having their own fleets and legions of men. Some tried to combine their strength and fight the newly christened New Republic, some fought amongst themselves, some made deals with the Republic, trading their fleets and men for influence and leniency. Others just sat back and waited to see who would take the upper hand. As such, most of the New Republic's fleet strength was Imperial Class Star Destroyers.

I'm fairly certain you can see a Star Destroyer in orbit over the capital of the Republic when it gets destroyed, it was a split second though. It was stated that the New Republic Fleet was destroyed too.

I concluded Alliance turned into Republic and made many compromises with remnants of Empire (ie general pardon) and after decades of wars even truces with former Imperial generals and warlords like First Order. Resistance are radicals who wants to fight evil Empire until the final end, they are supported by Republic, but not openly, because that would complicated Republics diplomatics position?

The rebels believed that the Death Star was nonfunctional, and that there would be a handful of Star Destroyers in the area. Their capital ships were there to run interference on what they thought were a couple Imperial ships while the fighters moved in to destroy the station.

What I assume happen is the empire dissolved into different fleets as above. The rebels rallied more systems, but never had enough of a fleet to contend with the entire empire fleet. And if you are all ex-generals you would work together against a common enemy. In some aquiessence the generals reestablished the Senate, which weakened the rebels in the eyes of the people, and were essentially puppet senators, each answering to some moff or grand general. And the rebels became the resistance, trying to hit generals who fought over territory when they were weak, but never really able to destabilize the entire establishment. So, the first order arose as a segment of extremists, like Isis, and rallied many young generals to their cause. The destruction of the Senate was a declaration of war not against the resistance, but essentially saying the first order was the most powerful of the remaining empire factions, and everybody better fall in line, Snoke is the new emporer, so get your shit straight.

Basically, yoda makes it clear him that ben lied and vader is in fact his father. I always loved that part because It makes luke question which side is right (vader is his father but he's "evil", but ben lied to him), it sort of reaffirmed that he's walking a thin line between dark and light (like in the palace how he tries to negotiate peacefully but when jabba threatens to kill his friends he tries to shoot him to death and loses his composure)

It was never really "Cannon" in the first place. George let them write whatever they wanted to, but they weren't allowed to have the emperor or vador show up (with a few notable licensed exceptions). It was just tolerated it, but there wasn't anyone wranging a coherent expanded universe. The rule was basically "Don't contradict the movies, or any other preexisting EU book." So it was just a big fucking amalgamation that occasionally wasn't awful. More often then not it was suncrushers.

But I don't blame disney for ignoring it, they have the ability to pick and choose from the few good things offered, without having to conform to a convoluted universe that eventually covers THOUSANDS of years of galactic bullshit.
