According to EU and other supporting materiel from the original trilogy, the armor is designed to stop shrapnel, blunt and bladed attacks (won't don shit against a vibroblade, a laser sword, or a vibro anything really, and there is places where you can stick a normal blade between armor) and projectile based weaponry - literally slug throwers - ie Firearms - the most notable of which in the movies was the tusken raider rifle - basically according to EU firearms are still found in the galaxy and are common in places where blasters are heavily regulated, and in primitive cultures - and firearms are easier to manufacture than blasters.
Also the armor is designed to mitigate some of the wound potential of blaster shots, the point is aside from incredibly rare cortosis there isn't much that can stop a blaster and be readily worn

His training isn't anywhere near complete but he does have raw force power. Since lightsaber battles are more about skill he's likely still a novice when it comes to that.
So you had Rey a novice with raw power and Ren a skilled force user but mostly raw power with a novice fencing skills.

Well, this is just my opinion, but I think the way Yoda explains it, you don't really have a limitation on what you can and cannot do, regardless of what "side" you're on. You just count as a Sith/Dark Jedi if you take the easy path.
