Tatooine still makes sense considering it was the Outer Rim and there were battles between the Empire and Rebels in those areas. So a crashed Imperial Star Destroyer still makes sense.

Why would the Rebels fight the Empire on Tatooine? There was way too much of a Imperial presence there anyway. Jakku on the other hand must've been home to a Rebel base or otherwise had some sort of strategic importance.

It was where the imperial fleet was hanging out. Tatooines whole point was that it did not have an imperial presence, at least until a handful were sent looking for a droid. Its too far into the outer rim to hold meaning in a war.
