Tell me about Snoke. What do we know about him? What are his motives? When will he pull out that little lightsaber of his and go to town?

Snoke was the Supreme Leader of the First Order, and appeared to be a calculating and reserved military leader as well as a powerful master of the dark side. Kylo Ren of the Knights of Ren described Snoke as "wise," while Han Solo and Leia Organa believed he was manipulative and that he exploited Force-sensitive individuals, such as Kylo Ren, only for their power. Snoke was very old, having a vast knowledge of the past and of the Force.[4] He displayed tendencies unusual for practitioners of the dark side, displaying an interest Kylo Ren due to his embodiment of a balance between both the light and dark sides of the Force, as opposed to only one aspect.[7]
Snoke is around 7 feet tall and very thin and frail with large hands. His hologram used on the Starkiller base projected him several times larger (Around 25 Feet) than his natural appearance, towering over Kylo Ren and General Hux. Snoke had an elongated face with pale, scarred skin and dark black eyes. He sported a large scar from the top of his head, all the way down to his brow. Snoke also had what appears to be a scar or burn on his right cheek that causes his mouth to sit upon a contorted, scowling smirk. Snoke wore a simple, hooded cloak similar to those worn by previous Sith Lords. Snoke tended to speak slowly and enunciate his desires with a forceful undertone.
Snoke shows little emotion and appears very calm and didn't appear to be in any form of worry or distress despite the circumstances against him and the First Order. When the Starkiller Base was being destroyed, he calmly expressed his wishes without showing any form of anger or annoyance, a stark contrast to his apprentice Kylo Ren, who is prone to violent outbursts when faced with frustration.
How come he ultimate evil always has to be a pale, almost featureless human of incredbly unremarkable design, in a universe with horned, fanged, scaled monsters hanging out in the background who actually look weird and menacing?

And if you look closely, they have some similarities. I know that the story about Darth Plagueis is not canon anymore, but they can still use this character i think.

There are two possibilities, one is that he is Plagueis, one is that he is Palpatine. The method for both their survival hinges on the tragedy of Plagueis, both Palp and Plag, could have both learned the immortal force technique and can either body hop, or just straight up preserve their soul through death.
Remember in the EU books after VI, palpatine is a force ghost and tries to possess Jacen Solo I believe which is Ren in this film. So the main plotline may be that Plag/Sheev, is trying to use Kylo Ren to get to Rey to possess her/steal her force powers, or is going to possess kylo forcing Rey to kill him in an epic climactic and emotional struggle.
They could even give Ren the redemption for the series while he has to kill Rey and thus learns the fallacy of the dark side or vice versa.
Cool stuff they could do with this trilogy, just my two cents.

Literally the most evil emperor in human history, and he's just totally forgotten in 30 years.
Think of it this way.
Kylo Ren is admiring and even worshiping Vader.
Why would Kylo obey Snoke and even kill his own father for him saying that the supreme leader is wise.
The only explanation that makes sense is that Snoke is Plagueis. If Plagueis told Kylo that he created Anakin out of the Force and the entire Skywalker line from that point is his creation along with all the power it wields then it would make sense for Kylo to respect Snoke.
It doesn't actually matter if Plagueis did create Anakin or not, what matters is that he knew of the event of Anakin being made through the force and he liked to Kylo about it which gives Kylo reason enough to obey him.

He's immortal and is probably capable of body transfer like many Sith before him. If you read the EU books, which aren't canon but whatever, Sheev himself states that he doesn't quite believe that his master is dead - and he spends a great deal of time worrying about the prospect of his survival.

If Sheev can avoid detection for years whilst in the political and social limelight. I'm sure someone more powerful than him would have no trouble remaining under the radar in some less visited part of the galaxy.

Because Plagueis is a master manipulator. He never does anything if he can twist somebody into doing it for him. From the books we know he was the one who originally instructed Palpatine to enter into politics; he was the one who intended to act as the power behind the throne. Sheev thought he put an end to this by doing away with his master, but it's likely Plagueis anticipated this and incorporated his 'death' into his grand plan.
The fact that they also use Plagueis' exact theme for Snoke's introduction is pretty clear indication too.

As for why he waited so long to take the helm? Think about it. He's wise. He understands that, while he may be able to make himself immortal, one of the fundamental truths of the universe is that all great empires fall just as surely as they rise. In order to circumvent this cycle, just as he circumvented the cycle of life, Plagueis decides to simply accept that the Empire is destined to fall but makes sure he's always one rung above the administrator, the emperor, to carefully manipulate the fallout to his liking. This is why he appears so unfazed by the destruction of the super weapon. He understands that everything is impermanent, but has learned how to manipulate impermanence itself in order to attain unlimited power. He's practicing a perverted form of Stoicism. Maybe that's why they're giving him a 'classical' look.

This is what I find odd: Despite the Emperor being who he is and doing what he did, hardly anyone (at least while he was alive) knew the true nature of him. Him knowing the force, much less being a Sith, was pretty much a secret to all but like 6 or 7 guys.

Either way, it's obvious Snoke is Plagueis and the First Order and Starkiller were designed to combat Sidious and the Galactic Republic/Empire. Just so happens that Vader killed the Emperor and the he collected the remnants quickly increasing his power tenfold.

I hate the prequels too but I still think parts of it were cool. Like the scene where Sheev tells Annie the story of Plagueis. Plagueis wasn't otherwise used in the prequels so he's a blank slate free for them to imagine the way they want.
I'm going with an original character, Maz Kanata did say she has seen the dark side in all manner of forms the Sith, the Empire, and now the First Order. I think he's just another manifestation of the Dark Side that has always existed.

Finn was holding his own against him and managed to injure him, Chewbacca was able to shoot him in the leg, and he's clearly worried he'll never be as strong as Vader, because he wont. All of this had been played down in TPP so it was a huge improvement for me.
The art book mentions JJ didn't nail down his gender until late in development, and his look wasn't designed until post. He's a new character but I like the idea of him being Darth Maul after he gave up trying to become a sith lord.
