It could be done with shades of green and red, or yellow and violet too, it's just that those colours are much harder to make appear natural.

Orange and blue are indeed contrasting colors (not exactly complementary colors, yet close enough to complementary, that the contrast is very visible but doesn't appear too loud and garish) that are paired in nature quite often. That's why it is way easier to boost those colors during post-production and still maintain a somewhat natural feel than this would be the case with other contrasting colors.
However those colors also have a symbolic value: Warm vs. cold, light vs. dark, good vs. evil etc.
During the last decade or so it has become really hip to boost those colors, sometimes so much that they basically drown out the natural spectrum. Compare, for example, the LOTR movies and the Hobbit movies. The Hobbit trilogy takes the blue-and-orange fad to an almost ridiculous level.
This trend is especially noticeable in the sci-fi-, fantasy- and superhero-genres by the way. And in the few cases where the movie sticks to a somewhat natural color scheme, you can be sure that the corresponding poster will still be blue and orange.
