In actuality, western sworfighting is much more complex than what the Japanese had. There are tons of different styles and techniques, all suited for various kinds of combat, including swords as main weapons, which kenjutsu didn't do as much. HEMA is a pretty varied, and quite technical.

I don't even live in america. But the concept of sword training being 'stolen' from china, (of all asian countries) is absolutely absurd. Especially when there's historical evidence of martial training in europe right down to the greek empire.
Now if you were to argue that modern theatrical sword fighting is largely inspired by flashy chinese theatrical wushu, then i'd partially agree with you.
However, the mere idea that "sword fights" were two people smacking swords together, is completely wrong.
Unless we're talking theatrically, in which case, they wouldn't break the sword because that's relatively expensive (not that theatre's didn't used to have things like horse races on stages).
If you were to state that fencing was similar to the jian historically, i'd also agree with you, because sword fighting doesn't tend to differ very much because there's only so many ways of practicality in combat. But their origins are different, and evidence of the development of both exist finely enough.

Actually I was watching one of the documentaries on the DVDs and they pointed out that they changed it over the course of the movies. Obi Wan vs Vader was slow and they explained it as the combatants both being older. As they moved on to the later films with Luke fighting it made more sense for the thing to be lighter, enabling more flashy sword fights with a couple flips and shit. Then of course the prequels took it to another level.
