There are two god tier films based on/influenced by HoD already(Apocalyse Now and Aguirre). Moby Dick has none. Just a really old sort of okayish (but not quite) film, a couple crappy forgotten tv versions, and some The Asylum sci-fi action bullshit.

You could Titanic the shit out of it, even WHILE stating true to the material.

In real life, Melville heard the story about some boat getting really really fucked up by a whale. He thought "o shit nigger that's fucking terrifying". A few brainstorming sessions later he decided to write Moby Dick. This movie is the story about that original ship.

That's the main adaptation. It's also ancient (in Hollywood terms), skips over the vast majority of the content and themes, and honestly not that good, despite the people involved.

It's a great story but you have to sift through hours of discombobulated bullshit to find it. Every movie ever made about that story revolves around something like half a dozen scenes.

Nobody watching movies these days would care. There's been no save the dolphins or "write your governor" campaigns for today's youth. They don't care about that stuff anymore. The closest they got was after Black Fish and all the San Diego SeaWorld did was release their Orca. Nobody will see whales as a threat.
