A major theme of the series is people will do just about anything to get on tv. They think it'll help their business and tap into their 15 minutes of fame. It's hilarious the lengths these people will go to. So yeah, obviously they know they're on tv and that they're supposed to play along with Nathan's ideas and stuff, beyond that, I don't think it's any more "staged" than that plate thing, a simple, visual gag added after the fact maybe.

Clearly people disagree and think that's the most poignant example of the show being staged.
