Give george credit for creating new shit in the prequels since some of the design was brilliant. he just fucking sucks at plot and characters. Probably anything easily identifiable by mainstream audiences, so that little bat-alien in the cantina in Ep. IV has a good shot of being the protagonist in a star wars spin off movie.

I think there are a couple of good storylines in the legacy EU that would make for good anthology films or even another trilogy. A rogue squadron film for example where you get an ensemble cast of a dozen pilots and support crew, follow them around through a mission or two, and then they have to go into battle in some suicide mission against the empire / first order.
That or introduce Kyle Katarn or Corran Horn into the new canon and base a film around them. Those are both fan favorite characters that have interesting traits, do interesting things, and their paths don't intersect with the core characters from the previous films often enough to make re-inserting them into the canon all that tricky.
Fuck, do a Corran Horn trilogy with Ysanne Isard or Admiral Daala as the villain you get recycled material presented as new universe-expanding stuff for the masses, you get a strong female villain to hit that SJW progressive quota, you get a character people like, some good storylines to work off of, another jedi to sell toys about if you want to go that direction and you can place that story anywhere in the timeline because it doesn't really matter.
