Why am I forced to believe he's some type of uber mage? He only really uses his magic once. When he turns the trolls to stone in the Hobbit. Do his spells have a six movie cooldown?

Basically, he isn't allowed to. If he uses his magic to directly influence events, then he will be stripped of his power. He can certainly push people in the right direction and can influence people's opinions in a normal fashion, but nothing more. He certainly is powerful enough to have won the battle of Pelennor fields by himself, but he would have been stripped of his power and status had he done so.

Overuse of power (use without self restraint) leads to corruption - where you can end up like sauron. He only uses it when he needs to.

Actually in LOTR and The Hobbit movies Gando uses quite a range of magic:

- enchanted fireworks / illusions
- telekinetic staff blasts
- create light
- aura/shield
- weather control
- enchant sword (prior to killing balrog)
- pyrokinesis
- induction (heating Aragorns sword)
- stun blast (vs goblins in hobbit)
- remove curse

it is a popular misconception that he uses hardly any magic. When it's required he has no compunctions about pumping out a new spell.
