Well, they do use them to an extent in the comics. Glenn even built something with a crossguard to stab walkers through the fence while at the prison, though I forget if they used that in the show.
I do know they had a knife deal for a while, Gerber or some other company, hence why everybody besides Michonne fights with small knives rather than something at least machete length.
In terms of dramatic tension if they got the knives out they can take care of an individual walker with little effort. Once they get start acting stupid in other ways or get caught off guard by a ninja walker, it doesn't really matter how long the weapon is.
