You see Jan George Oscar Fett was sick of his day job and decided to leave his office desk and become a bounty hunter and in order to hide his true identity, he used the initials of his midlde names onto his first name, therefore he became Jango.

He looks cool, had a menacing voice (originally at least), he had a jetpack and a wrist laser and other gadgets. He's the only bounty hunter that appears more then once. He stands out even among a sea of weird faces.

People liked him, so he was made cooler and more "badass" in EU material, so people got more invested until he became bigger then it was ever planned. It's just how things work. Look at Darth Vader. He started out as one of the main villains and eventually became Jesus

He was popular only in the OT. Then the prequels came out with Jango and everyone disliked him

He was popular pre-prequels because he was the only stand-out "bad guy" apart from Vader. Even then, he is not a part of the main group of bad guys, so he rides the line. He is shown to talk back to Lord Vader. His motives remain unexplored, which invokes suspicion, and thus imagination by fans. His character has many different paths it can take.

Mix this with being cool looking and being really good at a cool occupation, he was bound to attract some people
