They never talk about battle in the OT, the jedi are implied to be a small order that protects the republic in secrecy. They aren't presented as soldiers. Maybe they work covertly or in disguise, and only in targeted ways, like obi wan in a new hope - he's posing as a hermit, can fool people with mind tricks, and he's sneaky enough to make it to the death star's tractor beam. Luke didn't go in guns blazing in cloud city either. But they make confrontations directly when necessary, like obi wan facing vader to buy time for luke's escape, or luke turning himself in to go straight to vader in ROTJ. They are a mix of monk, ninja, and samurai archtypes.
As for lightsabers, I don't see why a jedi couldn't use any weapon, but lightsabers can deflect blasters, so it's pretty much a shield and sword in one. That gives them more discretion in who they kill and who they spare.
We can't know if the lightsaber duels are about honor because lightsabers are the only weapon that's effective against force users. It's not like they are holding back.
