Well imo it's kind of complicated. On one hand it's kind of bullshit how the movie mixes cultures and time periods to make one cinematic stereotype of a mesoamerican blood native. On the other, the individual pieces aren't that inaccurate. And the story is done with surprising humanity. To complicate things further, Mel himself is probably a racist and christian chauvinist, but it doesn't seem to bleed through into the film as much as critics wanted to believe.

Problems: the film depicts Maya, but clearly wants to remind the audience of Aztecs. The Maya's glory days of grand temple complexes were long over by the time of Spanish contact. The Maya did occasionally engage in human sacrifice, but they weren't all about it like the Aztecs were. Many of the sacrifice rituals seem to be more Aztec.

I'm not an expert so no. I'm just recounting what I've heard before over the years.

You can go looking for evidence of Maya sacrifice yourself. Particularly codex illustrations except for one or two everyone shares seem to actually be Aztec and people just associated it with the Maya. It clearly happened at points, but they didn't seem to have an entire obsessive religious-social institution built around human sacrifice like the Aztec did. They don't have asshole gods like Tlaloc that love blood (the more miserable the better).

I listened to reddit's askhistorians board (deal with it) podcast on mesoamerican cultures not too long ago and I specifically remember the supposed specialist commenting on the sacrifice scene on Apocalypto, so that's what I was thinking of a lot. Though I can't remember for sure if for Maya or Aztecs. Apparently the sacrifice scene on the temple is surprisingly accurate except for the body disposal part. They really liked to burn hearts and it was usually done in the presence of royalty like that fat kid in the movie. I think.
