So on a whim I decided to do a weekend in Quebec, I'm burger but I can bullshit a little in French... my wife speaks a bit better than me.

Where should I check out? I'm thinking Quebec City hang out and look at architecture, go get some poutine, watch a hockey game and get some drinks and then get up to breakfast at some place recommended by Yelp, and hang out at Montreal until my flight is ready...

Anything more interesting to add or other "must see" or "off the beaten path" type things?

Three places:

Old Town of Quebec City
Cozy as fuck. It's super old world-looking and makes you feel like you're in Europe.

La Ronde:
Biggest amusement park in Quebec near Montreal and 2nd-biggest in the country. Great if you like roller coasters. This only applies if you are visiting in the warmer months.

Exporail:
This is the largest train-specific museum in the country and near Montreal, also. They also have many examples that still run, particularly old timey trams.

Also, of course, don't forget to get some poutine and some ice wine.

Not at all.
Montreal is a completely bilingual city, some locals will not speak English, because they can't or don't want to, but any business or destination you go to will be fine.
Quebec City is not quite as bilingual, but it's a huge tourist destination so most people at any real destination or business/restaurant/accommodation/airport etc all speak English with varying degrees of success.

QC is based. I like it way more than Montreal, thinking of moving back there.
Old QC is alright but in my opinion St-Jean-Baptiste and its surrounding areas (alternate downtown if you will) and St-Joseph St in St-Roch are more fun, plus less crowded with clueless tourists.

There are a couple of nice outdoors places within reasonable driving distance too.

There some good skiing at Mont Ste Anne and Le Relais.

On the way there you might want to stop at the Montmorency waterfalls.

During winter, skiing in the mountains of Charlevoix.
During summer, visiting either that or the parks and stuff in the Rimouski area.

Frankly not that much. I don't get why people want to visit Canada for its cities, it's more of a place for the outdoors and the countryside.

I meant between Quebec and Rimouski, the latter might be a bit far depending on the time you have.
Also Saguenay-Lac-Saint-Jean is worth a visit too if you have the time.

There is a biodome where you can find all sort of live animals.
There is a planetarium.
There is a huge casino.
There is a botanical garden, currently there is a special event with thousands of live butterflies.

Depends what you're looking for. I always felt like the city itself is a museum, with a really good nightlife and amazing restaurant. I posted this list of bars in another thread:

Grenade - Food and drinks
Benelux - Beer place, always packed
Apt 200 - McGill hipsters

Blue Dog - Great DJ's sometimes

Big in Japan (the bar, corner of Rachel St) - Classy and refined

Bily Kun - Czech-inspired pub

That's a tiny portion of all bars in the city. Doesn't even cover stripclubs.

I'm not OP, but I am going to Montreal this summer and will be staying at the M Montreal hostel. Can you get to La Ronde by the metro or is it only accessible by bus, car and walking?

Yes, most people go there that way.
There's also a shuttle bus to minimize walking and get the full burgerclap experience.

A few people mentioned the casino and I was just wondering how loose the slots were? I know in Niagara Falls they were unwinnable, how are they in MTL?

You forgot Vices and Versa. If you're a big fan of craft beer, this place is a great place to try a lot of quebec microbreweries.
