Nahiri is vengeful and ruthless. Willing to act for the greater good, even willing to sacrifice herself for it, but uncaring about who she hurts in getting way. She didn't want the people on innistrad to suffer, she just didn't give a damn about them so long as she was able to make Sorin suffer as much as possible.
They are both capable of being villains, and both have a distinct personality and reasoning for the bad things they did.

Phyrexia was evil across all colours, not really a prime example of Green taking centre stage. As far as Xenagos goes, he's distinctly Red/Green, which differs greatly since his evil traits were pretty clearly sunken into the red.
This differs from Nahiri, who was pretty firmly established as white and then it seemed red was sorted on as a balancing reason. "Insanity" knows know colour, as Shadows of Innistrad itself shows, so I hardly think slapping red on is much of a justification.

most of the conflicts did get pushed aside when EMN rolled out. Vampires made a rush in, zombies lead by Liliana lending support, the werewolves joining up with the humans (I do wish they'd had more than one normal werewolf in EMN, not just referencing them fighting the corrupted ones in flavor text).
They just had Emrakul creating his spawn my corruption, which happened to everyone but was most notable with the angels because they were so universally good before.

Just imagine it had been Ulamog only for those two sets, culminating in the army helping set up that Hedron trap and succeeding in containing him.
The survivors of Zendikar would actually get to help in a meaningful way. The Gatewatch still looks credible because they planned it out and took a Titan out of play, but its not to the point of ridiculous where they kill two unkillable entities by themselves. It leaves both Kozilek and Emrakul at large for use in the future, and it leaves Ulamog's escape as a possibility.
It also would have let them do a better story in 2 sets, since set 1 could have been conflict with Ulamog and set 2 could have been the resolution, instead of having to rush and establish Kozilek as a threat as well.

Sorin was operating under Ugin's belief, which was that the Eldrazi Titans couldn't be killed, only imprisoned. And while he didn't stay behind to fight in Rise of the Eldrazi, that's because he had gone out looking for Ugin, the guy with the mana knowledge necessary to re-imprison them.
He didn't stay to fight what he thought was a losing battle and instead went to go seek out what he believed was the most viable, permanent solution. That's not villainy, that's pragmatism.

Sorin's Vengeance causes exactly enough loss of life to kill a player after using the middle ability on his original card - if you piss off Sorin, the worst thing he'll do is kill you. If you piss of Nahiri, she'll kill everything you have ever known and loved, no matter the cost or if they're involved in any way, shape, or form.
If anything she's the single most dangerous threat to the entire Multiverse right now. I have no idea what she is going to do now that Sorin is as good as gone. But she gives no fucks about the multiverse. Hell, I don't think she will even care that Zendikar is alive.

I think it's because muh waifus. For some reason angels seem to be a huge deal to a lot of magic players, even among reasonably adjusted folk that I know that play.
As far as muh good guys go, I think it's just that people want high-quality good guys instead of forcing the gatewatch into everything.
And as far as white mana goes, Innistrad is the plane where White = Good more than anywhere else, so any change to that makes them buttflustered.
I say all of this liking angels, good guys, and White more than anything else in Innistrad.

The thing is, while Nahiri is spiteful, her actions are understandable. Not that I'm condoning it by any means, she went well beyond the realm of proportionate response, but you can at least UNDERSTAND the thing fueling her actions. Under the guidance of beings she considered infinitely stronger and wiser than her, she volunteered (and half surrendered) her home plane to be the eternal prison for the most ancient horrors known to the multiverse. She also volunteered (slash was coerced) to be their warden, remaining on Zendikar forever (effectively giving up the gift of her ability to planeswalk) to keep an eye on them. In exchange for that service, Sorin and Ugin swore to always come help if shit went fucky. Shit went fucky and nobody came. Thousands of years she'd been monitoring the Eldrazi, and when she NEEDED the promised help, it didn't come. Ugin was dead (or in a coma, depending on the timeline), and she feared Sorin dead too, but she finds out the reason he didn't come is because he was busy Eldrazi-proofing his own plane. And when she confronted him because she'd thought he was dead and it turns out he was more concerned with his home than the bargain they struck, he continued to belittle her and treat her like a tool instead of a person. She overreacted by attacking him, but he escalated it further by shoving her into the Helvault for a thousand years, where she was unable to save her plane when the Eldrazi broke out (UNDER SORIN'S NOSE). So from her perspective, he abandoned her, then abandoned Zendikar, and she wanted blood. She's not in the right, but you can understand her motivation.
Sorin wasn't spiteful, he was selfish. He didn't attack anything out of spite, but he broke promises the second they became inconvenient for him. I don't condone Nahiri's actions, but I can empathize with her position. Sorin has zero room for people to emphathize with, because he is consistently a selfish, lying asshole.

Besides I don't think she was being that calculated and rational. She's basically high on vengeance.
The act was horribly evil, but what made it evil was her indifference to who gets hurt along the way. Which Sorin has in equal measure to her.
Again, inexcusable evil, it's just that Sorin has also done horrible things and deserves to be kicked in the balls. And probably killed because he might not be crazy like Nahiri, he's completely untrustworthy, heartless, and selfish.

I thought that was part of Urza's appeal? The fact that he was a monstrous hero, the sort that orchestrated the death of planes so that he could weaponize, the sort that planned for a planeswalker's death so that he could utilize their spark for a bomb, the kind of person that created entire races specifically to function as weapons in the war against Yawgmoth. He was a fucking monster on a grand scale, the only thing is that he did it all to destroy an even bigger monster - and not even for the right reasons.
Nahiri operates on that same sort of lofty oldwalker level. Planes aren't worlds full of people from an oldwalker perspective, they're collections of resources claimed by other planeswalkers. From an oldwalker's point of view, what she's doing is the equivalent of burning his house down. It's the sort of thing that Urza would give a thumb's up and say "fair's fair" to.
If you found Urza to be a compelling character, then you should do the same for Nahiri. They're not all that different when it comes to their methods.

There's nothing wrong with raising the stakes on a setting that you apparently only visit ever 6 years. It's not like Innistrad won't be around for the next time they revisit it, probably when Emrakul breaks out of the moon. Then they can bring back Avacyn again, or something like her.
