The question is why are humans always skeleton humans?

How do you know they are? Do you have enough knowledge of anatomy to tell an elf skeleton apart from an orc skeleton apart from a human skeleton? I suppose you could discern if something was a dwarf or halfling or gnome skeleton, no one uses those so it wouldn't come up.

Because humans tend to be numerous and exist in every part of a given game world, so it'd never be out of place to have human skeletons in a given area.
Of all of the types of skeletons that don't get hacked apart to make broth,
human skeletons are the most readily available to necromancers.

Only humans have bony skeletons, dwarves have metal skeletons that can't be reanimated, elves have cartilage-based "bones" like sharks that are useless for necromancy.

What about Orcs? An Orc skeleton is probably way better for combat than a human skeleton would be.
Another thought is that Humans tend to keep all their dead in one place, other races less so.
