Because elves are a cultural meme that have taken on an existence well beyond their original premise. Everyone projects upon them the race they 'wish them to be,' dropping out all alternate truths of elves that prove inconvenient for them. Even excluding them, the recent LoZ you still play as, you guessed it, Link, blonde blue eyed hetero male hero out to save another princess. (I know they claim he's gender neutral, but that claim is full of shit, he's an empty/iconic character we can all relate to, but he's still a he for now.)
Even outside of games you still have plenty of movies and books where the main character is a hetero white male. It's not going away, just like how there will always be books with a hetero black male, or hetero white female, etc.
And there's no reason to be upset about that.
