Would space marines ever consider doing big game hunting in the 40k universe or other imperial factions?
Imperial Guard maybe. Space Marines definitely not as they don't collect or do anything for personal gain.

I think they'd mostly be fine with collecting trophies from the battlefield during the course of their duties, but they wouldn't go around doing it for sport. That's a paddlin'. They might have a grudge against somebody and hunt them down.

Some chapters may. Some IG regiments do. Rogue traders definitely do it en masse.

with the amounts of skulls they decorate with, it's plausible, but warp touched weapons and daemonic flesh are corruption in themselves.and would not make for trophies

IIRC several chapters do, notably the Space wolves and Salamanders
though I'd be hard pressed to find a reference to show you.
