I know this is basically a meme response a lot of times. But honestly it's not too bad provided someone (obviously preferably the GM) knows the system somewhat.

You can play basically anything.

You wanna be a magic sentient broom? A 7' golem who can make origami come to life? A pixie shooting lightning out of a guitar? A spaceman from another world?

Fucking done. Most fun though of course if you make your own setting.

System depends on what kind of game you want to play.
Future space travel stuff? Generic medieval fantasy? Modern fantasy? Dystopian future fantasy? Something setting specific?

Awkwardly. Sometimes even painfully.
GURPS really is never the best answer, because even once you get past all the specialist systems designed for the game you want to run and past all the superior generic systems, any of the major brand games tends to work better than the mess that is GURPS with a little refluffing.

5e is probably the best answer.
Worth learning because it's easy to find a group.
And more importantly it's fairly ruleslite.

Probably not an issue until after several campaigns. (not sessions!)

If you really, really want to be as ruleslite as possible, run FUDGE or some shit?
Though at that point you should just run freeform roleplay.
