Depends on the writer and the subject. As always.
Spess muhreen codexes and so on are not very deep. Sandy Mitchell however, crams a load of daily lives and depth into the setting. Even makes it not very grimdark at all.
Even with the same writer, it can go from one extreme to another. Dan Abnett's Gaunt's Ghosts series is entertaining but shallow "GLORIOUS GUARD" stories. But his Eisenhorn/Ravenor inquisition series' have loads of depth, character development, and a more interesting view of Inquisitors as investigators, rather than maniacal heretic hammerers.
Seriously though, everyone in this thread should read Sandy Mitchell's Ciaphas Cain novels. They remove nearly all traces of grimdark. It's like Black Adder meets Flashman in the 40k setting.

While I agree the Cain novels are rather good, I do not understand why you think they are not grimdark.
They often point out, that soldiers die because of inept commanders and stupid decisions (like putting the 2 valhallan regiments together which, without Cain would have been a disaster)
They regularly point out how bad the imperial system is, when it comes to maintaining a functioning society (commisars getting shot, Admech is stupid/worse then tau tech)
They often show just how weak the imperium is, and that only with lots of dead soldiers can problems be fixed(chaos cult/genestealer cult getting strong)

The thing about Requiem Vampire Knight is that while the universe is excessively dark (Resurrection is basically hell), it's also quite humorous and lighthearted at times, with characters even poking fun at that kind of edge.
