there was this player I had that loved hoverboards and was currently playing a knight in a fantasy setting. His mount had died and he was looking up the loot to search for money to buy a new, powerful mount.
Then he noticed he had a flying carpet in his inventory. Worried that he wouldn't be safe on a simple flying barrier of fabric, he strapped the carpet on the back of his magic shield, and using the straps of the shield to ride it, he started charging people on top of his flying shield.

The coolest mount I ever had was an Ape in 3.5e.
I was a 6th level druid, got an ape, and because I was 6th level the ape would gain it's 6th HD, which meant that it also gained a bonus feat from Druid progression.
There was nothing in the rules stopping me from giving it EWP Spiked Chain. And Leather Barding has no ACP.
I now had a literal tank that I rode into battle.

Oh it was, especially later on when I had used another bonus feat to give him medium armor proficiency and mithral full plate armor.

I have a colonial kingdom set in a biome like Costa Rica that uses giant tapirs for transport. Mainly for merchandise but they can be used for carrying people as well.
That and mules, donkeys but thats not so out there.
