That comes from old lore that Tolkien incorporated in his earlier Middle-earth stories, but is not a primary Dwarf characterics in the Hobbit, not in a serious sense (except for the Arkenstone, but that's just the gem warping the minds).

Again they do not have that as a primary trait. They exchange goods because they're crafty but don't have developed economies anymore, but as a race they'd be more for accumulating riches (making it so their realms start exchanging with the others a lot more) than creating a proto-capitalist economy.

Not sure what OP is getting at, but Tolkien did openly acknowledge that the Dwarves are based in part on (what we think of as European stereotypes of Jews. The beards, the mistrust of outsiders, the grudges, the guttural language, being a people banished from their ancestral homeland and forced to wander the world as merchants and craftsmen, etc.
