In my setting the Maori, Tongans, Samoans, etc are represented by half giants. Olmecs (ancient people of Guatamala) are represented by Goliaths.
I had this idea that the Not!Pacific Islanders had a kind of kung fu, but with the styles based off Manta Rays, Sharks, Dolphins, Sea Snake, etc. I also had this idea of them practicing it out in bays, half submerged in the water on stone circular platforms that have been submerged.
Even though the martial arts were broken up by animal styles they also had two different philosophies to martial arts called Gentle Current and Broken Wave, where Gentle Current is more about state of mind and reading the opponent and Broken Wave was destructive power.

Karen Traviss originally wrote Mandolorian culture as deeply Celtic in form, and later writers, and even her own writing, infused some Maori into them as well. Mostly there tattoos and war chants.
That being said one of my all time favorite characters was a Maori Street Samurai. I admit he was a stereotype to the extreme (alcoholic, strong-fat, huge family,chronically poor, and a career criminal.) but my fellow players and the GM didn't know that so it was all good.

But they managed to avoid getting put into reservations like the Native Americans (at some point, that was a stated goal for the Pakeha).
