Northern Algarve is pretty cool, the Monchique area has some great food and is great for sightseeing, also worth it for the kekworthy town names.
Coast areas are also pretty cool during festivities since beach tourists rarely care about them. Castro Marim near the border is pretty cool around September when they have this huge event that's like a Renaissance fair where they open the castle to the public, it's pretty fun even if it can get pretty crowded, and eating pão com chouriço along with a beer inside the castle feels pretty awesome.
