Older players typically have higher [insert sport here] IQs. They typically have a more refined skillset because they can no longer solely rely on athleticism like they once did. They will usually have more big game experience.
And I'm unsure just exactly when a person's hand-eye coordination starts to decline to the point where they can no longer compete in whatever sport. But I don't think it declines that much if the person takes care of themselves. Baseball players can remain elite hitters until their late 30s. Jack Nicklaus was winning major titles in his 40s. Ronnie O'Sullivan is still probably the best snooker player (when motivated) and he's 40. Bernard Hopkins dominated his weight class well into his 40's, etc.

A player who relies enormously on speed is going to decline massively over the years, but slower players can keep a high level of performance all the way to retirement.

I would agree with that. Just look how many boxers can become world champs or remain in world championship contention into their late 30s and even late 40s.
And while the boxing match itself might not require as much as stamina as a soccer match, boxing training is probably one of the most intensive training for a sport there is.

Yes, stamina does go down no matter what, but it can still be kept at a level sufficient for football as long as the player has qualities that aren't based on speed and vivacity.
A guy like Luca Toni bloomed extremely late, and at 37 he played a full season and scored 22 goals, as many as a guy who's 16 years younger.

I think part of it is because they're less biased against age, and maybe their formation system doesn't promote "degradable" skills as much as other countries.
In France we've had some good league players who could have played a lot longer, but clubs just don't want them and these guys end up having to play in the lower levels if they want to continue playing football at all.
