Basically think of it as if the play happened in the field of play outside the end zone. Receiver has to catch the ball, demonstrate control of the ball and make a football move (or just hang on for a second or two). Same rule applies in the end zone.

When running the ball into the end zone, all of that happened before crossing the plane of the goal line, so as soon as any part of the ball crosses the plane, it's a touchdown.
