Wilkinson Hydro 3, but I recently bought a Wilkinson classic. Any recommendations on good blades? The ones that came with the razor didn't convince me.

Safety razor for my face.
Veet for everything else. Surprisingly doesn't burn as much as people implied.
I use a pair of Trevor Sorbie clippers without any head attached. Keeps me at a constant "2 days of stubble" and its the only way I can shave without getting a horrendous neck rash.
Also learned to cut my own hair using the length adjusters. Pic related. Need to work on my blending, but only a barber would notice my mistakes.

I just bought a safety razor recently, the dude in the shop where I bought it recommended I just try a shit load of them, one of the ones he mentioned that I liked so far were Astra platinums.

I shave my face with an Edwin Jagger double edge, and tend to shave my head with a disposable. Just easier since I cannot see it all, though I really should use the double edge on my head as well.

Face shouldn't be sore from shaving. Double edge and straight razors are particularly good for that. Outside of that - blades will always get closer shaves than electric, and if you've facial hair, electric mangles the tips.
