Can /sci/ help me ?
Is there an easy application that generates vector field maps from Navier-Strokes simulations ? It usually represents directions and velocity with colors.

I use PARAVIEW for this.
It's FOSS but you might have to do some surgery on your export setting or file format
I used Fluent, with mesh generated using Gambit.
It is quite nice
