How to change the color of juice?
Say I want to make tangerine or orange juice white.

You have to modify the biochromes within the orange juice. No idea how to do it chemically, but if you managed to find an inhibitor that could stop the manufacturing of the pigment, and find a way for it to synthesize white pigment, then you could theoretically grow a white orange. Whether it produces white juice is a different story.

Umm actually you don't want white you need to add a florescent light blue. If you just add white you will only get paler shade of orange.

well in those two examples, the responsible pigments are assorted xanthophylls. you could try adding oxidizing agents such as H2O2. You can try FeCl3 or Iodine. just fuck with the chromophore as this guy suggested >>7979051

you could also add fat, and homogenize the crap out of the juice, in an effort to achieve a colloidal suspension that will exhibit the Tyndall effect (this is why milk is white)

if you want to change the color of juices, the easiest example is cranberry juice. the anthocyanins responsible for the rich red and purple colors are sensitive to pH. decreasing the pH will give you a really qt pink-magenta juice colors while increasing the pH will give you a rich deep indigo color.

it is all simply modifying the chromophores. refer to Fennemma's Food Chemistry textbook, Food Colorants chapter for more detailed information. Fantastic text

Just look up the ingredients and mix it together yourself? Leave out the parts that give it color.
