If a star was instantly split in two down the middle and the two parts was moved a kilometer away from each other, what would happen?

Would re-coalesce nearly instantly.
That's an insane amount of potential energy being released, so I think we can rule out "nothing happens." I'll think about how to calculate how insane.
If the star was split in two the exposed core would try and escape out, as well as the entire star would collapse back on itself.
How the core materiel would interact with the rest of the star I can't say.

The two halves would hit each other in like a second or two. The core would try to escape but won't make it far before the halves touch again.
This will result in some violent sloshing and thus a higher frequency of solar flares and whatnot.

It was set up that way as an initial condition.

The star is stable when it is split. That means the core is made of heavier elements that are not fusing yet (the fusion products) as well as the main fusion reactants (likely hydrogen but it depends on where in the sequence your star is).
At any rate, the star will immediately collapse inwards towards itself. The force of impact increases the pressure and temperature and begins a momentary, highly increased rate of fusion, possibly including the non-reacted fusion products as well.
All of this energy, including the impact of the implosion, result in an explosion which wont be contained by the gravity alone as you have already upset that balance.
The star, for all intents, goes nova.
