Why does water boil at 100 degrees Celsius?

because that is the completely arbitrary number in degrees celsius assigned to the physical temperature at which water boils at sea level, more or less.

will add that the only unit that isnt arbitary is Kelvin, but only at 0 K. The energy of 1 K is simply chosen to match up with celsius for convenience, which again is a completely arbitrary system of measure.

absolute zero is the only physically defined point of temperature that is totally independent of any extenuating factors.

It was defined that way because of the metric system. They wanted 100 degrees between the freezing and boiling points of water. The modern definition is a little different, but that's the history.

The Fahrenheit system is based similarly on the freezing point of a specific concentration of brine whose temperature is easy to control.

Because the metric system was created around the concept of water falling into the tens. density of water is 1 etc. Everything else measurement is based relative to water.
We could have made it 50 but then the math wouldnt be as nice.

Intermolecular interactions. That just so happens to be the point at which it becomes more favorable to enter the gas phase to be in the liquid phase. The molecules have enough energy to stop sticking to other molecules and fly away. It's like if you asked why vallies are lower than hills and why balls roll down them.

That is the temperature of which the molecules are needed to achieve a certain energy level to move about, at sea level.

As altitude increases, the energy level needed to excite the molecules decreases, and thus temperature needed to boil water falls below 100 degrees Celsius.
