I was thinking of that line from Silence of the Lambs that Hannibal Lecter says, "I ate his liver with fava beans and a nice chianti", cuz my friend is always saying that and they have fresh fava beans in the pods at the store so I figured I'd eat liver with them. So I made a fava bean pesto (with lemon and almonds) served on toast and picked up a chianti at the store too. And liver with mushrooms and onions. Aren't I so silly? :D

So basically here are my ingredients:
fava beans, almonds, garlic, anchovies, parmigiano cheese (I've had that one piece for almost a year and it's almost down to the rind ;o;), mint, a lemon, lemon infused olive oil, salt.
that's everything that goes in the pesto.

not sure. I didn't weigh anything. Liver is prob 120-150. bread might be 70 plus the pesto has a good amount of oil prob no more than 200 more. there is a little oil on the salad too. the veggies are pretty low calorie. probably no more than 500 total just guessing.
here is the mise en place.
zest the lemon and squeeze the juice. remove the beans from the pods, grate cheese, chop two anchovie filets, chop the almonds and garlic.
You wanna blanch the beans for about 30 seconds, chill them in ice water, and then chop them.. OH and you gotta remove that skin from the outside of each of them. lol I hadn't ever bought them whole before so I didn't know. Makes this take a little longer but they're tasty so worth the work!
so in a mortar and pestle mash together the anchovies, garlic and almonds until they form a thick paste
Add enough oil to loosen it, then mash in the chopped fava beans until they make a coarse puree. Add enough oil to that it comes together evenly. then stir in the lemon zest, lemon juice, salt, mint (cut it into ribbons if I didn't say before), and cheese.
Yum! Here is the pesto all complete. Use this for a pasta sauce too if you'd like! That is all, thanks everyone!

Ripe olives like kalamatas would be a good veg. substitute for the anchovies. Same color and also salty and savory. If you ever choose to make it yourself! If you don't have a mortar and pestle a blender would work, lots of ppl do basil pesto that way, but the texture will be more liquid and less chunky. Pesto means pestle btw also.
