Have you played a Monster Hunter game before? If not it's perfectly understandable that you'd be a bit lost. Especially since Generations does a poor job of explaining the mechanics to you directly. I'm no expert, but I have enough experience that I could try and answer any questions you have or give you advice on topics you're curious about.
I used to play this about 2008-12. I don't have the patience for it anymore. What happened to me? Why have I gotten more casual?

i have over 500 games in my steam library and i've never played a game for more than 10 hours, after which i've dropped it and never got back to it

Never played a MH game before, how do I even progress? Atm I'm just going through jobs, and took 3 hours worth of failing to kill that first dino boss, that isn't really even a boss and is just a bigger one

That's a pretty typical story for a new player. I don't know what you're specifically struggling so I'll try to give you some general advice. First things first, if you haven't already, do the "Hunter Basics" tutorial quests, and read all the text that pop up in order. They introduce you to basic mechanics such as gathering materials and other things. NOTE: all items you collect during tutorial quests you don't get to keep. This was something even I had to figure out the hard way, so don't try to farm anything during these quests, just try to learn as much as you can about the game.

Is it worth trying to do all the boss missions? I've done all the ones up to the boss ones, but just take ages to kill the boss and end up getting one shot by it when I can't see it anymore

Or should I work on farming out a full set of gear, all I have right now is the default gear and a longsword made out of bone that I crafted

Oh man you're actually not too bad if you're that far. Still you'll probably hit a wall if you don't do a few things. First of all, what weapon are you using, and what hunting style? It's ok to use a bunch of different kinds, but there are 14 types that all play differently so you'll probably want to focus on one or two. Second, have you been crafting better armor and weapons? Progression in Monster Hunter is directly tied to your gear so no matter how many quests you do you'll only be as strong as what you have equipped. Finally, are you using items to their fullest potential? You can buy and craft things such as traps and bombs to make fights easier. Monster Hunter is about preparation as much as it is direct skill during combat.

However this doesn't seem to transfer over to other games for speedrunners because they're extremely shit at other games too.
Although pro gamers in competitive games like street fighter/csgo/mobashit seem to have some transferrable skills between games because they're top tier at every game they play
I have about 100 hours on Monster Hunter 4 Ultimate and 60 on 3 Ultimate.
You'll want to familiarize yourself with how skills work and how your weapon handles. I played tens of hours with the Charge Blade without knowing its entire moveset.
I'd highly recommend Gaijin Hunter's series of weapon tutorials, they're very informative.
Yes, you really need a full set of armor ASAP. Tetsucabra Armor should be alright.

I just killed the tutsucabra with my bone longsword and default armor, was wacking him for at least a good 20+ minutes, had to follow him so many times before finally getting the kill. Is it normal for boss encounters to take that long?
Also do you guys have any more vids I should watch to get me eased into the game?

20 minutes is a bit on the long side, but not unusual. Especially not if you're not used to fighting a certain monster.
Most hunts will probably take you around 10 minutes, 15 or more if it's against something really tough.
