Knowing someone's sex isn't really necessary in most daily interaction, but we still use gendered pronouns because a lot of social normalcy is dependent on differentiating the sexes.
Right now many of us by default refer to every anonymous user here as "he" with thought to if the person is actually male (except for the instances where it's relevant or it's corrected). Knowing that the person is male or female doesn't really matter unless we find out.
