They can do it a lot of different ways, if it's wireless at all it doesn't really matter what you do nothing save VPN is going to protect your traffic, if it's wired, they can use settings of more advanced routers, if they have two ethernet ports they can configure the router to route traffic through their network card where it can be looked at with programs like wireshark, they can ARP poison.
