I work solo register at a gas station. The point of sale system's user interface is intended to be simple and straightforward enough that it can be learned quickly by anyone. Self-checkout systems use simpler, more streamlined versions of these programs. Most people buying gas from me require no action at all as the pay-at-pump with debit / credit is completely automated. My role is primarily to process cash purchases and just be present in the building in case there's a problem. That's valuable in itself tho as we have to shut off the pumps altogether when we're closed in case someone fucked up and pumped tons of gas into the ground accidentally.

That's exactly how my friend got fired when we worked at quiznos. Doesn't help that the owners are old fucks.
