You have to balance the clutch with the gas. Let go of the clutch slowly and press the gas just a little more.

I too have hit somebody with my car. Was working late delivering pizza on Friday night in a college town. This drunk girl who was walking home fell off the side walk and stumbled in front of my car and I hit her, but then she got up looking pretty shocked and bolted away, so I never spoke of it again. IMO, no harm no foul.
