Because decrypting it would give them whatever it is you're trying to hide. With truecrypt you can decrypt your drive and give them sensitive data, while hiding the really sensitive data inside another encrypted container. Even if you were to decrypt the first layer, you wouldn't be able to tell if there was another.

Well, let's face it, we're not secret agents or terrorists, so the only creeps we have to protect ourselves from are criminals, character assassination and LEA abuses.

In civilized countries you can't be demanded to provide evidence against yourself, and so by the time plausible deniability becomes relevant, things have already escalated beyond any realistic contingency plan (because the perpetrators are directly threatening your life and whatever you're trying to protect is no longer the highest priority).

If they have any evidence of the content you are not protected by the 5th amendment and they can force you to decrypt.
If you have a hidden volume then you can decrypt the standard volume and show you don't have anything. They also can't prove that you have a hidden container, so they can't use it against you.

What if you moved it out of the volume once and didn't securely erase the copy outside of the volume once finished? What if you did, but a log was generated at some point that identified the file by its MD5 hash, and that log is outside of the volume? What if any of a billion things happens that puts any kind of remotely incriminating evidence outside of the volume? You're fucked.

At least with FDE, absolutely everything is encrypted. There is no way for them to prove you possess the thing they suspect of you unless they can get access to the encrypted drive, the key to which you can refuse to provide.
