Dice it, fry with bell peppers, onions, garlic, add canned tomatoes & herbs, simmer until all is soft and you got a mighty fine spaghetti sauce.

20oz of cooking oil in a pot, with the eggplant chopped up inside ~1/2 inch per slice. Leave it at ~400F for and hour. Add half a cup of sugar and wait another 5 minutes. It turns almost into these candy like bites
