Mighty car mods is really fun, first saw their channel through their Japan documentaries. Same applied to driftworks. I dont own a car myself so its nice to see friendly people go sideways with cars and build weird cars out of crappy ones.
I also unironically enjoy Ray Sipe's video. Since 2012 or so when he made plenty of 4chan related videos.
I do follow many channels, but I only watch them because they are mildly amusing. Stuff like h3h3, idubbbztv, filthy frank etc, mindless stupid fun, but not something I have much to say about afterwards. I like MCM the most because the lads are fun, energetic and do things I could never do.
I dont really follow youtube gaming channels anymore, all the decent ones turned to shit with popularity.
