It probably appears to be a soap opera because it is, just because the setting is in a medieval inspired fantasy world that will never mean that the fight for that one achievement (the throne) and that poisoning other characters and killing and etc. (aka an interpersonal exchange driven plot) isn't a classic soap opera trope.

sansa got raped last season, it was full on feminist power fantasies by season 4 when D&D started writing their own shit like brienne beating the hound. the sand snakes was a failed attempt to introduce more stronk female characters. at least they realized it was a complete failure so the sneks have only had one scene this season so far.
the last kingdom is alright, better than vikings at least. the shield walls in the last kingdom were really impressive.

I've seen a lot of television, and GoT isn't bad relative to what I have had to sit through.
