Start with something easy to digest.
Yeah attack on Titan is pretty straight forward. It was able to introduce the next generation of edgy teens that run with their arms behind their backs.
Another good show is one punch man and JoJo's bizarre adventure (that starts off slow but gets grey trust me)
If you got time and aren't into shounen battles and stuff you could go straight to the cute shit like "toaru no railgun"
That's basically it. Remember it's written for wapanese teens, it may not apply to you

My first anime was cowboy bebop, it's very western so it'll kinda ease you into the anime "culture". Or i just dont know what im talking about. Either way its great.

Yea it's pretty good. Don't pay any attention to the elitists who claim it sucks. They're just being contrarians because it's popular.
