instant coffee tastes much different from, say, Starbucks, which tastes different from stuff you percolate at home, which tastes different from coffee from some hipster coffee place.

Coffee is best drank black and cold brewed or made with a French press. Fresher roasted beans result in better taste. I tried making lattes but my espresso press is shit so little can be done there. It's a fun novelty but costs too much unless you can afford the proper equipment. My French press and cold brew jar were both bought for under $10. They're vintage too. You can cold brew in the French press too.
