MGS2 was almost on there. I think it's one of the best as well.
Personally I think Deus Ex is good but overrated on replays. It's one of those "you can do anything, but it doesn't really matter what you do" games.
Never played Hitman.
Personally I think the world design is so incredible in Dark Souls that it brings it above Demon's Souls. I also think the general design sense in DaS is better.

Tetris is undisputedly the best. I'd argue that Dark Souls has too much of a niche audience. Ask anyone unfamiliar with this wonderful land of 4chan and they would state there hearing of good things but lack of interest.
Seeing your belief in a very well made game, you believe games should be complex or artsy. A game that has this but is much more main stream would be Silent Hill 2. Personally I prefer 3, but the question is the best not my opinion.
I have little knowledge of Doom, but I know of a certain shooter from valve that people may be willing to bring up on a golden pedestal.
