Someone explain to me why everyone uses lightsabre with two hands. Does the laser disrupt gravity or something? Why would you want to handicap your reach and speed?

Lucas has said in some interview that lightsabers are supposed to be heavy to handle for what ever space magic reason, and that he visioned the fights to be me more closer to medieval knights fighting with heavy two handed swords than some ninja shit.
